Gastronomic indulgence in Ostuni, Puglia

This week we have stayed at a Masseria (fortified farm) near Ostuni in Puglia.  It is nestled among its own ancient olive groves (500 years old) and orchards of various fruits on 150 acres.

One of the best gastronomic experiences we have had in Italy was the well renowned and reviewed dinner here.  It consisted of Apulian culinary specialties made with organic food grown on the estate and the meat of free range animals.  Following local recipes the owner’s wife prepares a different eight course dinner most evenings and serves it with the best local wines and a choice of 35 different homemade liqueurs.  Here is the menu: 

  • Fried bread pasta with sweet tomato sauce;
  • “half metre” long painted green beans and tomatoes with “marzotica” ricotta cheese;
  • Little balls (or polpette) of sweet white egg plant with capers;
  • Saffron infused goats cheese with pears and pear jam;
  • Home made whole wheat noodles with zucchini, zucchini flowers and saffron sauce;
  • Lamb and potatoes from the oven;
  • Mixed salad with fresh almonds;
  • Chocolate and vanilla torte with olive leaf liqueur;
